Chickpea With a Vegan Twist (Part II)
How do you describe a protein-packed salad that doesn't include any meat? The vegan protein salad recipe from Urban Body Fix is not only nutritious and healthy, but also simple to prepare. Chickpea salad is a delicious summer salad with cool cucumbers, juicy tomatoes, nutritious greens, tangy pickles, and avocados. This salad's unique feature is that you can make it in a variety of ways each time you make it. You may add nuts, fruits, herbs, or cheese, or serve it with various salad dressings. It's simple to keep in an airtight container in the fridge for days. There are so many ways to make it that you’ll never get bored!
Ingredients:
· 2Tbsp olive oil.
· 1 1/2 cup chickpea. (canned chickpea or uncooked)
· ½ medium yellow or red onion, diced.
· 1 tomato, diced.
· ½ bell pepper, diced.
· 2Tbsp minced garlic.
· ½ Tsp turmeric.
· 1 Tsp red chili powder/chili flakes. (according to taste)
· 1 cup spinach/romaine lettuce
· 1 cucumber, diced.
· 1 Tsp basil
· Pickles
· ¼ Tsp salt. (according to taste)
· Freshly ground black pepper
· Any kind of dressing of your choice
· 1 Tbsp lemon juice.
· Cilantro
· Vegan Almond cheese
Instructions:
Heat a medium pot over medium heat and add olive oil, followed by garlic, turmeric, red chili powder/ chili flakes and once everything is sautéed add chickpeas and let it cook for 2-3 minutes. Add some salt, black pepper and lemon. Now let the chickpeas sit aside for a while and let it cool. Take a large bowl, stir all the veggies (onion, tomatoes, bell pepper, cucumber, pickles, greens) and toss them well with the cooked spiced chickpeas. Add some creamy cashew vegan dressing (any kind of your favorite salad dressing) and garnish them with Almond cheese and cilantro.
