Fall Superfood: Butternut Squash

We all adore weekends, and I believe that October, November, and December are the weekends of the year, when we can enjoy all seasons and relish festive celebrations before the new year begins. Fall specifically, marks the beginning of the holiday season. Beautiful fall colors, Halloween, fall clothes and, most importantly, food and drinks come to mind when we think of fall. Fall provides us with a wide variety of seasonal foods, which is perhaps why we love it so much. 

Our previous blogs were about nutritious pumpkin and apple dishes. Today, we've got two tasty and healthful butternut squash dishes for you. Butternut squash is high in vitamins, minerals, and antioxidants, all of which help to prevent disease. It is also known as a “Fall Superfood”. So, let's get started on the recipes and learn more about them.

Roasted Butternut Squash soup:

Butternut squash soup is a traditional autumn and winter meal. But here we’ll be roasting the butternut squash, which adds a whole new level of flavor to the soup and eliminates the need to cut the butternut squash at all. Any vegetable that is roasted develops an earthy, smoky, caramelized sweet flavor. It's the same with butternut squash. All you need is some onion, garlic, nutmeg, ginger, vegetable broth, avocado oil, butter, red pepper, salt, and pepper. The texture of this soup is also super creamy after adding butter. The best aspect about roasting is that it doesn't require dicing. Simply cut it in half, drizzle with avocado oil, season with salt and pepper, and bake for 30-40 minutes. After it's cooked, we can let it cool for a few minutes before blending it. You may also roast the garlic and onion before blending it all together. You can top it with pumpkin seeds or parsley, as well as a sprinkling of black pepper.

Butternut Squash Frittata:

The butternut squash frittata is a tasty and simple one-pan breakfast. It's loaded with kale, butternut squash, onion, garlic, and goat cheese and is fluffy and thick. Kale, eggs, yogurt, goat cheese, onion, garlic, salt, and pepper are all you need. Simply sauté the onion, garlic, and kale in a skillet with the eggs and yogurt, then add the cubed butternut squash to the egg mixture. Place the frittata in the oven for 10 minutes to finish cooking. You can now have a delicious slice of frittata.
