Letting Them Eat Cake- GF Cinnamon Swirl Banana Bread Breakfast Cake

As mutual fans of the cake for breakfast mindset, I reached out to my resident gluten free sweet tooth chef @breadlessbella for her favorite breakfast cake recipe. This cinnamon swirl banana bread is perfect for breakfast with a smear of almond butter or as a crumble on a yogurt or smoothie bowl.

Recipe Details:

1/2 cup (1 stick) melted butter

1 cup brown sugar

2 eggs 

vanilla extract

2-4 ripe bananas 

1 3/4 cups gf all-purpose flour

1 teaspoon baking soda

Pinch of pink salt

1/2-1 tablespoon cinnamon 

1/4 cup granulated sugar

How it’s done: 

1. Preheat oven to 350°

2. Beat together butter, brown sugar, eggs, mashed banana, and vanilla 

3. Add rest of the ingredients & incorporate (flour, baking soda, salt, sugar, cinnamon) 

4. Spray pan cake pan & pour batter 

5. Sprinkle more sugar and cinnamon on top. Swirl with a butter knife. 

6. Bake for 45-50min
