Most Underrated Greens and How To Enjoy Them

Most of us would agree that "A healthy outside starts on the inside," but it also needs to be insinuated. The plant kingdom is diverse, and each one provides us with a collection of vitamins, minerals, and nutrients. We feel revitalized after eating a fresh bowl of greens for lunch or dinner. Greens have numerous health benefits, including weight management due to their low calorie content, a lower mortality rate, high fiber content, and a reduced risk of cardiovascular disease. My mother used to push me to eat greens, claiming that they would protect my eyes, which they did. Greens protect eyes from macular degeneration and cataracts in adults to the need for eyeglasses in children. But remember, moderation is key. So, you can eat your greens while also enjoying burgers and fries. But today we're going to talk about underrated greens and how to enjoy them. We frequently follow a diet cycle in which we are hesitant to try new things for fear of ruining the meal. These five underrated greens, on the other hand, will undoubtedly help you add new flavors to your meal. So, let’s talk about eating green and clean.

Celery is a very nutritious vegetable that is frequently served with wings or in small pieces in salads or soups. Celery contains only 16 calories per cup, as well as bone-building calcium, potassium, and trace amounts of magnesium, iron, and zinc. A simple way to eat celery is to dip it in salad dressing or pesto dressing. Celery would be a solid addition to hummus to make it more filling. Hummus is a thick garbanzo bean-based dip with garlic, eggplant, red peppers, and herbs that is popular in Mediterranean and Middle Eastern cuisine. Peanut butter and celery is a tried-and-true combination that adds protein to your snack.


Broccoli is high in vitamins, minerals, fiber, and antioxidants, making it a nutritional major player. Broccoli contains 6 grams of carbohydrates, 2.4 grams of fiber, vitamin C, A, K, B9, potassium, phosphorus, and selenium in a single cup. Steamed, stir-fried, boiled, and air-fried broccoli are all options. Antioxidants help control blood sugar, protect against certain types of cancer, support the immune system, improve oral health, and may even help slow the aging process. We often include broccoli in salads or soups, but my personal favorite way to enjoy broccoli while preserving its nutrients is to stir fry it in a wok with some oil and add a protein such as tofu, along with seasonings like soy sauce, garlic, and herbs. Overcooking can destroy important nutrients, so be careful not to over do it.

Brussel sprouts are the most misunderstood vegetable, but whether you like them or not, they are a powerful vegetable in fighting diseases like cancer and are high in vitamin K, which is important for blood clotting and bone health. Glucosinolates and cancer-fighting substances enhance the body's natural cleansing system. It includes lutein and zeaxanthin, two important nutrients for healthy vision, and is rich in vitamin c, which helps to maintain a healthy immune system. Roasted brussel sprouts are simple to prepare and filling. Simply place some brussel sprouts in a pan, drizzle with olive oil, sprinkle with minced garlic, grated parmesan, salt, pepper, and chili flakes, and roast until lightly browned.

Tip: Choose sprouts that are tightly compacted and firm when squeezed. In addition, smaller sprouts have a sweeter flavor.

Collard greens are high in antioxidants such as Vitamins A, C, and E. It may aid in the reduction of blood cholesterol, the prevention of cancer, the improvement of bone and liver health, and the aid of digestion. Collard greens could be used as a salad green replacement or chopped and added to a stir fry mix or soup.
