Zucchini Meatballs, zoodles of fun!
I first tried this recipe at a fellow gluten free friend’s house and I was obsessed (Shoutout to @breadlessbella). This Zucchini meatball recipe has no actual meat ingredients, yet it is so filling and perfect for any pasta recipe!
This recipe is super easy and the batter can be made in advance for an easy and tasty take on food prep. In my own kitchen, I am definitely an add and fix later type chef, which is what makes this recipe so easy, it’s so simple to adjust to get the texture you prefer.
What You’ll Need:
Bag/Box of Zoodles or Grated Zucchini
1 ½ cup (GF) Panko Breadcrumbs
¼ Cup of Grated Parmesan
2 eggs
1 teaspoon of olive oil
2 cloves of garlic
Basil to taste!
Salt and pepper as needed!
(Add breadcrumbs or olive oil as needed for preferred texture)
Scoop the batter into small meatballs and place on lined baking sheet
Bake at 350 F, until edges are golden brown, (about 20 mins)
