New Year’s Eve Recipe Ideas

We're nearing the completion of 2021 and looking forward to the start of 2022. Isn't that thrilling? We all desire a fresh start, a blank slate on which to write our hopes for a better world, especially after the epidemic made last year and this year stressful. That is why we want our New Year's Eve to be wonderful, filled with love and gratitude, so that we can say goodbye to 2021 and hello to the new year feeling energetic. UBF has some wonderful refreshing and healthy recipes for your New Year's Eve that will leave you and your guests feeling revived and ready to start a healthy and fresh new year.

Winter Fruit Salad

-        1 lb 5 count Clementine oranges, peeled and separated into segments

-        2 pears, cored and sliced

-        2 apples, cored and sliced

-        1 large pomegranate, to get 1 to 1 1/2 cups arils or seeds

-        4 kiwis, peeled and sliced

-        3 Tbsp honey

-        2 Tbsp fresh lime juice, from 1 medium lime

-        2 Tbsp fresh lemon juice, from 1 medium lemon

 

Combine all prepared fruit in a large mixing bowl, including 5 segmented clementine’s, 2 sliced pears, 2 sliced apples, pomegranate seeds, and 4 sliced kiwis. Now combine 3 tbsp honey, 2 tbsp lemon juice, and 2 tbsp lime juice, in a measuring cup until honey is dissolved. Warm the honey in the microwave for 10 seconds if it isn't dissolving easily. Drizzle dressing over salad and gently toss to combine. Serve immediately, or cover and chill if not serving immediately.


Sparkling Cranberry Kombucha Mocktail

This non-alcoholic mocktail is a lovely and refreshing alternative to traditional holiday beverages. The ginger and rosemary add a holiday touch, and the tart cranberry juice complements them nicely. So you can party all night long without getting a headache or dehydrated, and you'll also get a good dosage of probiotics.

-        2 bottles kombucha of choice (such as ginger, cranberry, or ‘original/unflavored’)

-        ½ cup 100% cranberry juice

-        1-inch slice of fresh ginger, thinly sliced, plus more for garnish

-        1 large sprig of fresh rosemary, plus more for garnish

-        Fresh cranberries, rosemary sprigs, and thinly sliced ginger for garnish

 

Set aside 4 double old-fashioned glasses filled with ice. Using the end of a wooden spoon or a muddler if you have one, muddle sliced ginger and rosemary together in a pitcher or quart-sized mason jar. Stir in the cranberry juice and kombucha until everything is well combined. Before serving, strain into ice-filled glasses and garnish with rosemary sprigs, a piece of fresh ginger, and a few cranberries, if desired.

 

Roasted Pears with Brown Sugar and Vanilla Ice cream

-        1/3 cup apple juice

-        1/3 cup firmly packed dark brown sugar

-        3 tablespoons unsalted butter

-        3 firm Bosc pears, peeled, halved, cored (about 1 pound)

-        Vanilla ice cream, for serving

Preheat oven to 400 degrees Fahrenheit. In an 8-inch square glass baking dish, arrange the pears cut side up. In a small heavy saucepan over medium-high heat, whisk together the apple juice and sugar until the sugar dissolves. Whisk in the butter. Over the pears, pour the sauce. Bake for 35 minutes, or until the pears are crisp-tender and beginning to color, basting occasionally with the juices. Place the pears on serving dishes. Serve with ice cream on top. Serve with any remaining juices. Pears can be served frozen as well. To do so, cool the pears and then set them in the freezer for about 8 hours, or until completely frozen.
